For the reds, such as Primitivo and Negroamaro, the choice falls on plots of land located further south, areas of red soil, limestone and sand, where the old trees have lived for decades with the shrubs of the Mediterranean. In the heart of Salento, land of great wines, and more precisely in the locality of San Marzano is the Notte Rossa winery. A wine that is not afraid of strong pairings. It is ideal in combination with tasty and intense dishes such as baked lasagna or meat dishes, such as braised or stewed meat. Served at the right temperature, never above 18 degrees, it is a wonderful companion for savoury dinners. Dry, full and enveloping in the mouth, it has a long finish well balanced between the beautiful tannins and softness due to alcohol. A modern wine even if deeply linked to the tradition of Salento.
